We’re passionate about the process because making true Italian EVOO is an art. It starts in the fields during the harvest, which takes place in October and November each year. To guarantee the oil maintains its peak quality and maximum health benefits, the freshly picked olives are rushed to the press and are pressed within a maximum of 12 hours.

We touched on polyphenols, but they’re worth celebrating and talking about! These are the little miracle molecules that give a fresh, authentic EVOO that wonderful peppery kick or slight sting in the back of your throat. If your olive oil tastes smooth and buttery without any peppery finish, it likely has very few polyphenols—meaning fewer health benefits and less fresh flavor. Because our Italian artisans press the olives so quickly—within that critical window—they lock in those powerful antioxidants.
